
The 2007 sparkling, consisting of 65% pinot noir, 35% chardonnay, was released in November 2010. With 3 years on lees it has produced biscuity and bread flavours, yet maintained fruity youthfulness.

This sparkling wine has spent more than 3 years on lees. It is still building complexity, but has length and balance to the predominately citrus flavours. Continued time on cork will do it no harm. It finishes crisp and clean.
